Dark Chocolate & Almond Butter Cookie

Ingredients

  • 1 cup almond butter (creamy)
  • 1/4 cup cocoa powder
  • 2/3 cup coconut sugar
  • 1/2 tsp vanilla
  • 1 flax egg (or normal egg)
  • Pinch of salt
  • 1 tsp baking soda
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350
  • In a large bowl or using a stand mixer, beat together the almond butter, coconut sugar & vanilla
  • In a separate bowl, sift together the cocoa powder, salt & baking soda
  • Add the dry ingredients to the wet, slowly & steadily and mix until just combined
  • Add flax egg and beat until just combined
  • Fold in dark chocolate chips
  • Using a cookie scooper (or spoon) measure about 1 tbsp of dough, roll in hands to form a ball
  • Place on pan & gently flatten with hands
  • Bake for about 7 minutes (they burn easily)
  • Cool for about 10 min
