{"id":13449,"date":"2026-01-06T16:53:55","date_gmt":"2026-01-06T16:53:55","guid":{"rendered":"https:\/\/360fit.biz\/?p=13449"},"modified":"2026-01-06T16:53:56","modified_gmt":"2026-01-06T16:53:56","slug":"herb-roasted-parmesan-acorn-squash","status":"publish","type":"post","link":"https:\/\/360fit.biz\/?p=13449","title":{"rendered":"Herb Roasted Parmesan Acorn Squash"},"content":{"rendered":"\n<p><strong>INGREDIENTS<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 large <a href=\"https:\/\/misfitsmarket.pxf.io\/6yZAP3\">acorn squash<\/a> (or 2 small acorn squash)<\/li>\n\n\n\n<li>\u2153 cup grated <a href=\"https:\/\/misfitsmarket.pxf.io\/3J1jdA\">Parmesan cheese<\/a> (plus more for garnishing)**<\/li>\n\n\n\n<li>2-3 tablespoons fresh herbs OR 1 teaspoon <a href=\"https:\/\/misfitsmarket.pxf.io\/RGV16y\">dried herbs<\/a> (I suggest thyme, sage, rosemary, oregano, or a mix of these)<\/li>\n\n\n\n<li>1 tablespoon <a href=\"https:\/\/misfitsmarket.pxf.io\/4GVJWG\">butter<\/a>, melted*<\/li>\n\n\n\n<li>\u00bd teaspoon <a href=\"https:\/\/misfitsmarket.pxf.io\/dOdL7y\">garlic powder<\/a><\/li>\n\n\n\n<li>\u00bc teaspoon <a href=\"https:\/\/misfitsmarket.pxf.io\/19A1DB\">fine salt<\/a> (plus more for taste)<\/li>\n<\/ul>\n\n\n\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 400\u00b0F.<\/li>\n\n\n\n<li>Line one large (or two medium-sized) baking sheets with parchment paper.<\/li>\n\n\n\n<li>Cut the squash in half, from stem to tip, and scoop out the seeds. Then, with a sharp knife, cut each acorn squash half into \u00bd-inch thick moon-shaped slices.<\/li>\n\n\n\n<li>In a bowl, combine the Parmesan, herbs, melted butter, garlic powder, salt, and black pepper. Toss until well mixed.<\/li>\n\n\n\n<li>Spread the acorn squash pieces out onto the prepared baking sheet(s).<\/li>\n\n\n\n<li>Using your hands, gently press half of the Parmesan mixture onto one side of each squash piece for maximum coverage (it\u2019s okay if a little falls off).
